Ok, so the next part of the ultimate use of your chicken recipes, here is a fave and can be easily altered to fit any tastes, and works in the crockpot well too with some minor alterations.
Easy chicken potpie
serves 6
1 1/2 c chopped cooked chicken
3 c frozen mixed veggies, thawed
3/4 c water
2 bouillon cubes
2tbsp flour
1tsp thyme
pepper to taste
biscuit mix made according to directions, separate
Mix the frozen veggies, chopped cooked chicken, and flour together in a 9x13 glass casserole dish. I use a veggie mix that includes green beans, peas, carrots, onions, corn etc, but you can easily substitute in fresh veggies, chopped small, I often throw in cubed zucchini if I have a lot on hand as well as sweet potatoes or parsnips, but be sure to chop them in to dice sized pieces so they will cook well. Warm your water and add the bouillon to it, as well as the thyme and pepper, and stir to dissolve. Pour the water over the chicken and veggie mix and bake at 350* for 30 minutes, then add your biscuit mix, in 6 dough "balls", to the top and finish baking 15 minutes.
If you want to alter the recipe to make it more crock pot friendly you can use the same amounts of veggies and chicken, but leave the veggies frozen, and stir them all together in the crock. Take 3 cups of stuffing mix, dry and mix it with 1/2 c water, gently stir, it will still be dry but this is good. Place the moistened stuffing on the chicken mix and cover, cook on low for 6-7 hours.
