chicken recipe continue

Crunchy baked chimichangas:
1 1/2c chopped cooked chicken
1/2c picante sauce or salsa, plus more for serving
1c shredded cheddar cheese, plus more for serving
2 green onions, chopped, plus more from serving
1tsp cumin
1tsp garlic powder
1tsp onion powder
1tsp salt
1/2tsp pepper
1/2tsp oregano
6 8-inch flour tortillas
2 tbsp butter melted

Preheat oven to 400*
Combine chicken, picante sauce, cheese, green onions, cumin, garlic powder, onion powder. salt and pepper, and oregano in a medium sized bowl.  Divide the mix evenly between the tortillas, fold the sides of the tortillas in over the filling, then roll up from the bottom and place seam side down onto a baking dish.  Brush with melted butter.
Bake until golden brown, about 25 minutes, serve with cheese, and green onions with salsa on the side.

We have also found that this is really good if you add rice and beans and corn to the chicken mix.  I make them for lunches, wrapped up and frozen, then reheat for lunch, yum!!!  With more filling items you will also get more chimis, so it helps stretch the recipe for leftovers, or very hungry kiddos:-)
