It is winter, so I feel compelled to serve warm, hearty comfort food to my little, and big, trooplings. Down side, comfort food can be pricey, time consuming and not the healthiest, yikes, not comforting, that! I have found, and tweaked a newer recipe to suit our desire for comfort, and it is so versatile that anything can be changed and it still comes out great, check it, and get comfortable;-)
Spaghetti pie
1/2 lb spaghetti, cooked
1 c cooked broccoli(I use the frozen, chopped, cheap kind)
4-5 slices chopped, cooked bacon
1 small onion chopped
1 1/2 c shredded cheese(any kind will do)
1/4 c Parmesan
1 c sour cream
7 eggs, beaten
2 tsp Italian seasonings
350*
Grease a deep dish pie pan, put in, and form into the pie shape the cooked spaghetti. Mix the chopped onion, broccoli, and bacon, and spread evenly on the spaghetti. Top with shredded cheese and Parmesan sprinkled on top, in separate bowl mix beaten eggs, sour cream and spices, pour over cheese and veggie mix, being careful not to overfill the pie pan, as the egg mix "puffs" up while cooking. Bake at 350* for 45-60 minutes, until the cheese in browned and bubbly, and the eggs, when tested with a knife, comes out clean.
This is really good when fresh, and great when eaten the next day, just slice and warm, yummy, and really filling! There are tons of variations to this too like the following, similar to lasagna, without the work, or with different veggies added in, or omit the meat, whatever suits your family taste buds!
Spaghetti pie lasagna
1/2 lb cooked spaghetti, kept hot
3 eggs lightly beaten
1 small chopped onion
1 c stir fry pepper mix, spinach or chopped zucchini(or mix, but only 1 c total)
1/2 cooked, chopped sweet Italian sausage
2 tsp Italian spices
1 tsp garlic powder
1 1/2 c sour cream
1 1/2 c spaghetti sauce
1 c shredded mozzarella cheese
1/2 c Parmesan
oven at 350*
Grease a deep dish pie pan well. In medium bowl place the hot, cooked spaghetti and add in the beaten eggs, stir eggs in, they will start to cook, and create a creamy coat on the spaghetti noodles, when this occurs pour into the greased pan and form into a pie crust shape. Place your veggie mix in next, and onions, then sausage. In small bowl mix the sour cream and spices together, and pour over the veggie and sausage mix. Pour the spaghetti sauce over the sour cream, then layer on the cheeses. Cover with foil and bake for 30 minutes, then uncover and bake another 20 minutes until bubbly and browned. This is great fresh, and freezes well too(uncooked), and makes awesome leftovers, just slice and serve.
